TAILGATORS!!!

This week was a big one for me. Florida was playing at Texas A&M in A&M's first game in the SEC. I have to admit I was nervous after how we played last week. The game didn't start out great but in the second half the defense really tightened up and Gillislee ran great again. We came out with another W so we are now 2-0 on the season. Hopefully that groin injury will be healed up by this Saturday. Ahhh....this Saturday is Florida vs. Tennessee in Knoxville and college game day will be at a Gator game for the second week in a row. Go ahead Corso and pick the Vols because last week you picked A&M and it turned out great for us! But let me get back to this past week. We had Michael's parents and grandmother over to celebrate her 84th birthday while also watching football. As an added treat Marcus was in town. The last time we saw him I was pregnant with Brexley! He is from Germany and Michael's parents had him as a foreign exchange student. It was so great to see him. This week are food comes from none other than Pam Tebow. Yep that's right Timmy's mommy! We love the Tebows in this house and were so blessed to get to hear Pam speak a couple of years ago. Loved listening to what she had to say because Tim would not be the man he is today without those wonderful parents that God blessed him with. Both recipes went over really well. (Michael really liked the pie!)

Me and Pam Tebow

 Tebow Family Pizza Pie
1 pound ground beef
1/2 cup chopped green pepper 
1 envelope Italian-style spaghetti sauce mix
1 can (6 ounces) of tomato paste
3/4 cup water
1 tube (12 ounces) refrigerated buttermilk biscuits
1/4 cup plus 1 tablespoon grated parmesan cheese, divided
2 cups (8 ounces) shredded part-skim mozzarella cheese

*Cook the ground beef and pepper over medium heat and drain. Stir in the sauce mix, tomato paste and water; bring to a boil. Reduce heat and simmer for 7 to 10 minutes.
*Separate biscuits make into a dough and press it into the greased pie pan to form a crust. Sprinkle with a 1/4 cup parmesan cheese and fill it with the meat mixture.
*Sprinkle mozzarella cheese and remaining parmesan over the top. Bake at 400 for 15-18 minutes or until crust is golden brown and cheese is melted.

Recipe is from Taste of Home. This was good and i'll make it again. Next time I might add Italian sausage and i'm going to try using my Mom's pizza sauce recipe. 


Tebow's Special Ice Cream Pie
2-1/2 cups Rice Krispies
1/4 cup plus 3 tablespoons light corn syrup, divided
3 tablespoons butter
2 tablespoons brown sugar
1/4 cup hot fudge ice cream topping
1/4 cup creamy peanut butter
1 quart (4 cups) vanilla ice cream, softened


*Place Rice Krispies in a large bowl and set aside. In a saucepan combine 1/4 corn syrup, butter and brown sugar. Bring to boil over low heat and stir occasionally. Pour over cereal and toss to coat. Immediately press into pie pan to make a crust. Set it in the freezer while make the next mixture.
*In am small bowl mix the fudge topping, peanut butter and remaining corn syrup until smooth. Spread half of the mixture over the bottom of the crust and freeze until firm. About 20 minutes. Put the remaining mixture in the refrigerator. 
*Spoon ice cream into the crust, cover and freeze until firm. About and 1 and a 1/2
*Remove pie from freezer about 10 minutes before serving,  heat remaining mixture and drizzle over the pie.

I used all of the mixture on the bottom of my pie because my pie plate is bigger and just used the fudge topping on the top. Recipe is from Taste of Home.
