TAILGATORS!!!
Welcome to our first addition of Tail Gators for the 2012 football season! Why Tail Gators? The Tail is for Smokey the Tennessee Vols mascot and of course the Gators is self explanatory! Last Saturday we kicked off college football season with a brunch during College Gameday! Loved having my Mom in town and our friends over!! What would tail gating be without great food? 
Here was our brunch menu:
Panera Cinnamon Crunch Bagels with Hazlenut cream cheese
Pigs in a Blanket
Fresh Fruit
Chips and Salsa
Hash Brown Casserole *

We had a great time and even though our first game of the season was not impressive at least the season has started and no matter what we will still be chomping in this house! Well maybe Michael won't be....He will be singing Rocky Top!

Hash Brown Casserole
30oz Hash Browns- We like the square cut, not the stringy, but either works.
2 cups shredded cheddar cheese
1 stick of butter
1 pint of sour cream
Onion powder, salt & pepper

In a bowl mix sour cream, onion, salt and pepper. No measurements, just season to taste. Melt butter over low heat. Add cheese and stir until melted. When melted add mixture to the sour cream and stir, then add the frozen hash browns and stir again. Spread in a large casserole dish. Bake at 350 for 45 minutes.
